TECHNICAL GUIDE

# Eight critical decisions in gummy formulation

A good formula is not a mixture discovered in one trial; it is a decision system in which product targets and process are designed together.

CONTENTS

## 1\. Quantify the product target

Starting development with subjective phrases such as “good taste” or “high dose” prolongs trials. Unit weight, daily serving, active target, sugar strategy, texture, shelf life and target market should be quantified in the first brief.

## 2\. Choose the gelling system for product behavior

Gelatin, pectin and other hydrocolloid systems should not be selected only for label preferences. Thermal processing, target pH, demolding, texture aging and storage conditions determine the choice. A vegan target may make pectin a strong candidate, but its process window and mineral load still require careful management.

## 3\. Consider solids, pH and water activity together

These factors affect gel formation, microbial stability and surface sticking. Record process values and test the finished product using appropriate methods. Water activity is not the same as moisture content, and a single measurement does not establish shelf life.

## 4\. Calculate the hidden effects of active load

An active ingredient changes more than the labeled dose. It may affect salt load, solubility, color, bitterness, viscosity and pH. The raw-material carrier and specification are also part of the formula.

## 5\. Design the order of addition and hold time

Adding heat-sensitive ingredients as late as possible may seem attractive, but it must be balanced against homogeneity and microbial-control requirements. Time spent in an intermediate tank is also part of process loss.

## 6\. Build the sensory system around the active profile

Flavor, acid and sweetener choices should respond to the active ingredient's aftertaste as well as the target consumer. Instead of relying on one strong flavor, consider the opening, middle and finish of the sensory profile.

## 7\. Do not separate scale-up from the formula

Heat transfer in a laboratory vessel does not behave like a production kettle. Mixing shear, surface area, transfer lines and depositor hold time change industrial formula performance.

## 8\. Start stability work during development

Shelf-life work should not be a formality that begins only after the final formula is complete. Observing packaging and storage scenarios in early prototypes can reduce expensive late-stage changes. Confirm the final shelf life using the finished formulation in its intended packaging.
